    Part One: Foundations of Buttercream Flowers



    Part one will focus on a variety of versatile and adaptable drop flower techniques with an emphasis on developing skills that empower students to make intentional stylistic choices. Within basic, user-friendly techniques, specificity and variations will be explored with an eye towards achieving decoration appropriate for a wide range of events. This session is designed to build students’ confidence, both in technical skills as well as creative agency.

    Session goals: daisies, black-eyed Susans, cone flowers, lilacs, pom-poms, wallpaper layouts, corsage layout

    March 7: 9:30 am - 12:30 pm


    Part Two: Intermediate Buttercream Flowers


    In part two, students will learn a variety of high-impact piped, “flat” flowers, perfect for incorporating into buttercream bouquet arrangements or for using as stand-alone decoration to cover the entire top of a cake or cupcake. Vines, leaves, and greens will be introduced as a way to structure more advanced layouts. This session is designed to expand upon students’ growing skillset, while practicing synthesizing techniques to create dynamic and visually cohesive cakes.

    Session goals: Gerber daisies, sunflowers, tulips, pansies, fantasy flowers, vine and leaf variations, full ring layout, crescent layout

  • Specialty Greenery Cake
    March 14: 9:30 am - 12:30 pm


    Part Three: Extending Your Buttercream Flower Skillset


    In the final part of the series, students will have the opportunity to begin to practice the most challenging, elevated piped flowers with impressive lift--a must for adding drama and personality to any flowered cake. Advanced layout theory, expert tips and tricks for creating professional-looking designs, and an opportunity to practice “specialty greenery” round out the cake decorators’ toolkit. This session is designed to challenge students to push the boundaries of their own practice, to think like a professional, and to develop an eye for the details that will help them continue to grow as a decorator.

    Session goals: roses/rose buds, mums, water lilies, dahlias, evergreen, eucalyptus, palm, advanced layout theory
